Easy Applesauce Muffins

Ingredients:

2 cups flour

¾ cup sugar

2 tsp. baking powder

1 tsp. cinnamon

¼ tsp. salt

1 large egg, beaten

1 cup unsweetened applesauce

½ cup butter, melted

Directions:

Heat oven to 375ºF. Spray muffin tins with nonstick spray. Mix flour, sugar, baking powder, cinnamon and salt in a bowl. Mix in beaten eggs, applesauce and melted butter by hand. Evenly scoop muffin mixture into muffin pans. Sprinkle crystal sugar sprinkles on tops of muffins, if desired. Bake for 18-20 minutes; test for doneness by inserting a toothpick into the center of a muffin – if it comes out clean, the muffins are done.
