Honeydew, Try Something New!

Bread topped with melon salsaWhen summer comes, so do the delicious, fresh flavors of the season. Fresh veggies, berries and other fruits grace the local farm stands, and one of the favorite tastes of summer is the melon. Members of the squash family, melons in all varieties are particularly enjoyed during the summer months. Watermelon is almost synonymous with summertime picnics and backyard barbecues, and other varieties like cantaloupe and honeydew are delicious fruit salad additions.

While most of the time we think of summer melons as a sweet treat, they are also the perfect savory side. The next time you grill chicken, pork or fish, why not top it with a flavorful melon salsa? We’re sharing a recipe for honeydew salsa with you courtesy of Bon Appétit Magazine.

Honeydew Salsa

Ingredients

  • 1 1/3 cups peeled and seeded honeydew, finely diced
  • ¼ cup finely chopped fresh cilantro
  • ¼ cup finely diced red onion
  • 2 tbsp. fresh lime juice
  • 2 tbsp. olive oil
  • 2 tsp. finely grated lime peel
  • 1 tsp. seeded Serrano pepper, finely chopped

Directions

  • Combine all ingredients in medium bowl. Toss to blend flavors. Season with salt and pepper to taste.

Bon Appétit recommends serving this over grilled chicken breast, but it is also delicious with pork, fish or simply with lime-flavored tortilla chips. A word of caution – Serrano peppers can be hot, so if you prefer a milder salsa, substitute jalapeño.
