This Cinco de Mayo, Serve Up This Deliciously Healthy Recipe

Cinco de Mayo, Spanish for “Fifth of May,” is a celebration that commemorates the Mexican Army’s victory over France at the Battle of Puebla, which took place on May 5, 1862. Now often celebrated in the United States, the holiday often is spent enjoying Mexican food, drinks, culture and music. Taco Stuffed Peppers

Ingredients:

  • Extra virgin olive oil
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 lb. ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. cilantro, chopped
  • 1 tsp. chili powder
  • ½ tsp. ground cumin
  • ½ tsp. smoked paprika
  • 3 bell peppers, halved and seeded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded lettuce
  • Pico de gallo, hot sauce and lime wedges, for serving

Directions:

  • Preheat oven to 375ºF. Spray a large baking dish with cooking spray.
  • In a large skillet, heat about 1 tbsp. olive oil over medium heat.
  • Add onion and cook until onion is tender, about 5 minutes. Stir in garlic; cook about 1 minute more. Add ground beef and cook until no longer pink, about 5 minutes. Drain fat.
  • Add chili powder, cumin and paprika to beef mixture; season with salt and pepper.
  • Drizzle bell peppers with olive oil and season with salt and pepper. Place peppers into prepared baking dish. Spoon meat mixture into each pepper. Top with cheese, bake about 20 minutes.
  • Top each pepper with lettuce and serve with pico de gallo, hot sauce and lime wedges.

Helping Your Furry Friends Beat the Summer Heat

You know how sticky and uncomfortable the summer heat can get – now imagine you’re covered in thick, fluffy fur from head to toe, and maybe you can get some idea of how your pets feel when the mercury soars. When it comes to keeping your pets stay cool when it’s sweltering outside, there are a few tips suggested by the Humane Society of the United States that you can follow to help your pets beat the summer heat and stay safe indoors and out.

Avoid leaving your pet in a parked car. Even if the outdoor temperatures are only in the 80s, a parked car can reach temperatures above 100ºF. The dangers of leaving your pet in a parked car during the summer can include heat stress, heat stroke, organ damage and death due to suffocation.

Keep your eye on humid conditions. You know as a person, high humidity during the summer heat is extremely uncomfortable. The way pets cool their bodies is by panting, which helps them evaporate moisture from the air they breathe into their lungs. If they can’t eliminate this moisture, their body temperature rises. Keep your pets in the same humidity-controlled areas you enjoy when it’s muggy.

Keep exercise at a minimum. Again, use the same caution you would use for yourself. Exercise when it’s cooler, like early in the morning or later in the day. And, try to play with your pet in grassy areas – blacktopped and paved areas can get hot enough to burn the pads of your pet’s paws. Make sure your pet is adequately hydrated, too.

Make sure your pet has shade and water. When your pet is outdoors, ensure that it has a place it can go to that has plenty of shade. Outdoor enclosures should be in a shaded area, such as under a large tree, with the top covered by a tarp. Water dishes should be should be kept full, and ice can be added to keep the water cool for your pet.

Keep pets cool inside, too. Remember – fans don’t work great for a pet because how they process heat is different than with people. There are products available for pets that can help them stay cool when the indoor temperatures rise, such as cooling vests and mats.

Share a frozen treat to cool your pet down. Here’s a quick idea for a pet popsicle that your dog will love – simply take 1 cup of natural peanut butter (do not use any kind containing xylitol, as that is harmful to dogs) and combine it with half a ripe banana. Add water as needed to create a smooth consistency. You can then spoon the mixture into ice cube trays and freeze. Just pop them out of the tray when your dog needs a delicious cool-down.

When Do You Need New AC?

air-conditioning-in-new-scotland-nyJune has arrived, and so has the hot weather! We’ve already had a couple of days near 90, and the actual summer season hasn’t even arrived yet! You may have already relied on your air-conditioning to keep your home cool, but if you haven’t you soon will. If you’re thinking back to last summer and you don’t have fond memories of the way your AC system worked, you might be considering a replacement. How do you know when it’s time to install a new air conditioning system, or if some simple repairs will get you through?

According to Angie’s List, there are a few indications that can help you decide whether AC repair or replacement is ideal. The first factor their website mentions is the age of your air conditioning unit. Generally speaking, air conditioning units last between 10 and 15 years, and that is if they’ve been well maintained. If your unit is around this age, it may be time to consider a replacement. One way to know if you should replace your older equipment is to apply a general rule – take the cost of repairs and multiply it by the age of the equipment. If the total exceeds $5000, you should definitely think about replacing. (For instance, if you have a 15-year-old unit, and the repair bill comes to $450, that equals $6,750. That exceeds $5000, and means it may be more worthwhile to consider replacement.)

Next, you’ll want to consider energy efficiency. Older units do not operate as efficiently as older ones, and that causes monthly utility bills to be on the rise. While it may seem more costly to replace at the onset, many of today’s air conditioning systems, like the Bryant Evolution® Series, have a 19 or greater SEER rating – and that provides cool comfort at between 20 and 40 percent greater energy efficiency than our aforementioned 15-year-old unit.

Another factor to consider is the type of refrigerant your system uses. In older units, problems often arise due to leaks in refrigerant. The solution for that is for a qualified technician to add more. Older units often use Freon, or R-22, which is being phased out in favor of R-410A, a more environmentally friendly refrigerant. As it is phased out, the cost of R-22 is at a premium – sometimes as much as $175 per pound. Not to mention, in many units that develop a Freon leak, the compressor soon goes out – and that can cost up to $2000 to replace. A consumer can expect to pay between $550 and $1000 just for the R-22 leak.
