Summer is the time when we get together and enjoy the company of family, friends, and co-workers. Graduation parties, neighborhood block parties and company cook-outs are all fun get-togethers that allow us to kick back, relax and enjoy food, fun and conversation. If you’ve been invited to a potluck picnic, you might be wondering what to bring. Pasta salads, from the familiar, classic macaroni salad to the more Mediterranean pasta fredda, are always a popular dish to bring.

Most people enjoy pasta salads, and they’re easy enough to put together in advance or at the last minute! Here’s a pasta salad recipe with a fun twist – it uses cheese-filled tortellini rather than the traditional pasta. Plus, you can prepare it in just 15 minutes, so you can easily put it together in the morning before your potluck picnic and get on with the rest of your day. We hope you enjoy!

Tortellini Antipasto Salad

Ingredients

1 envelope Italian dressing mix

½ cup olive oil

¼ cup white vinegar

3 Tbsp. water

2 9-oz. packages refrigerated cheese tortellini, cooked and rinsed

1 small onion, finely chopped

1 8-oz. package mozzarella cheese, cubed

1 large green pepper, chopped

2 cups cherry tomatoes, halved

1 2.25-oz. sliced black olives, drained

Directions

  1. Prepare dressing mix with oil, vinegar and water as directed on dressing packet.
  2. Combine remaining ingredients in a large bowl. Pour dressing over and mix lightly.
  3. Refrigerate until chilled, about three hours.
